whole30 menu – day 7

My man loves to cook. It was a ‘must-have’ characteristic on my check list for a future spouse. He won my heart the first night he cooked dinner for me. Every since then, and many many many pounds later, he still has my heart. Whenever he is home he wants to be the chef. So today I gave him the new recipe for breakfast and let him go for it.

Breakfast – Paleo Pizza

Crust:

  • 8 eggs scrambled
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tbsp dried basil
  • Pinch of sea salt
  • Black pepper to taste

Toppings:

  • 1/2 cup marinara sauce (gluten free)
  • 1 lb ground mild italian pork sausage
  • 1-2 sweet bell peppers diced
  • 2 roma tomatoes sliced
  • 1 cup sliced black olives
  • 3 green onions sliced

In a medium sized skillet, brown the sausage and set aside.  In a large skillet heat the olive oil over medium high heat and add the minced garlic.  Saute for 2 minutes.  While the garlic is cooking, add the basil, sea salt, and pepper to the scrambled eggs and mix well.  Pour the egg mixture over the garlic in the skillet and turn the heat down to medium.  Cover and let cook for about 3 minutes, or until the bottom of the eggs are set and firm.  Do not stir or disturb the eggs while cooking.  Remove the lid and transfer the skillet to the oven and broil for another 3 minutes or until the top of the frittata is also firm.  Remove from the oven and add evenly spread the 1/2 cup of marinara sauce.  Add the cooked sausage and the rest of the toppings.  Place the pizza back in the oven and under the broiler for another 5 minutes.  Slice and serve immediately with avocado slices as a garnish!

This breakfast pizza was amazing. Melts in your mouth. So so so good.

Lunch was more of the leftover chicken salad that we can’t stop eating. Snacked on apples and fresh cashew butter, later a handful of almonds. We are trying to cut back on our meat budget because we spent quite a bit on chicken last week. So we decided to just throw something together for dinner and save the chicken for tomorrow’s dinner. Hubby came up with a quiche florentine. There is not really a recipe as he said he just used eggs, spinach, pico de gallo, and garlic powder. Who knows how much of what. So here is a quick photo to show you what it looked like.

The kids loved this. They shoveled it in their mouths. A week ago the boys wouldn’t touch eggs… now they ask for the. Thank you Whole30! Making our family healthier!
